The brief I have chosen to set myself is to capture the atmosphere and minutia of the professional working kitchen and it’s employee’s experiences. To do this I will produce a 3-5 short film centring on a small group of chefs working in Brighton. The filming will take place over several days at Marta Kitchens at the Preston Park Tavern with the staff of: Simon Duncan (head chef/owner), Blake Chrysanthou (sous chef), Joe Butcher (chef de partie), Stuart Teague (commis chef/kp) and Sacha Tiplady (kp).
I will carry out this project as a sole undertaking, doing all the filming, editing, grading, sound recording and titles. I will also write and record a score to the film is there is time available.
My Proposal
After some consideration I decided to go for the catering documentary as my independent project. I chose this because it seemed like a good balance between the size of the body of work and the timing compared to the other 2. I will also be filming in my place of work so it should be a lot easier to get good footage either side of my shifts. When it comes to interviewing the chefs they will also be a lot more comfortable as I already know them. Below is the proposal I submitted to my tutors:
